Gumdrop Cake

Ingredients

  • 1 c. chopped gumdrops
  • 1 c. chopped nuts or dates
  • 2 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. butter
  • 1/2 c. sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 c. milk

Directions

    Roll gumdrops and nuts with 1/2 cup flour.

    Sift remaining dry ingredients together.

    Cream butter and sugar; add eggs and vanilla and beat until fluffy.

    Alternately add dry ingredients and milk. Beat for 2 minutes at medium speed on mixer.

    Fold in gumdrops and nuts.

    Bake at 325° for 30 minutes, then increase heat to 350° and bake another 30 minutes or until done.

    Frost with a thin icing. Makes 12 to 16 servings.
