- 2 tablespoons olive oil
- 1 1/2 cups chopped onions
- 1 garlic clove, minced
- 2 1/2 cups hard alcoholic cider
- salt and pepper
- 4 halibut steaks
- 1 lemon, juice of
- 1 lemon, sliced
- 1 lb tomatoes, peeled and sliced
- 1 handful of minced parsley
- butter
Directions

1Preheat oven to 350°F.

2Heat oil in a skillet and saute onions until pale gold.

3Add garlic and cook a little longer.

4Stir in cider.

5Add salt and pepper to taste.

6Place fish in a greased baking dish.

7Add lemon juice.

8Arrange lemon slices over the fish.

9Pour onion-cider mixture over fish.

10Place tomatoes and parsley on top.

12Bake for 20 minutes, or until cooked.
