Ham And Bean Soup

- 1 1/4 c. dry navy beans
- 1 1/2 lb. meaty ham bone
- 1 1/2 qt. water
- 1/2 c. chopped celery
- 1/2 c. chopped carrots
- 3/4 c. potatoes
- 3/4 c. onions
- 1/2 tsp. salt
- 1/4 tsp. pepper
Directions

1Rinse beans.

2Place in Dutch oven with ham bone and water. Bring to boil.

3Reduce heat and simmer, covered, until beans are tender, 3 to 3 1/2 hours.

4Remove ham bone and meat.

5Cool until it can be handled.

6Chop meat and return to soup along with remaining ingredients.

7Discard bone.

8Simmer 30 minutes or more until vegetables are tender, stirring occasionally.

9Add water if it gets too dry.
