Ham and Cheddar Soup

Ingredients
- 2 cups diced peeled potatoes (I use red)
- 2 cups water
- 12 cup sliced carrot (I use baby carrots)
- 14 cup chopped onion
- 14 cup butter
- 14 cup flour
- 2 cups milk
- salt
- pepper
- 2 cups shredded cheddar cheese
- 1 12 cups cooked cubed ham
- 1 cup peas
Directions

1In a medium saucepan, combine potatoes, water, carrot and onion.

2Bring to boil then reduce heat; cover and cook for 10-15 minutes or until tender.

3Meanwhile, in another saucepan, melt butter.

4Stir in flour until smooth.

5Gradually add the milk, salt and pepper and let that boil.

6Cook for two minutes or until thickened.

7Stir in the cheese until melted.

8Stir in undrained potato mixture.

9Add ham and peas and let that heat up.
