  • 5 eggs
  • 12 cup sour cream
  • 12 cup half-and-half
  • 2 cups monterey jack cheese or 2 cups swiss cheese, grated
  • 1 cup cheddar cheese, grated (Kari recommends sharp white cheddar)
  • 12 cup ham, cooked (Kari uses half a package of lunch meat(I used 1/2 c regular ham)
  • 15 ounces pinto beans, rinsed and drained

Directions

    Bake pie crust for 10 minutes at 450.

    In a large bowl beat eggs.

    Add sour cream, half and half, grated cheeses, ham, and beans and mix thoroughly.

    Pour into pre-baked pie crust and bake at 350 for 35 to 45 minutes or until toothpick comes out clean.
