- 2 -3 eggs
- 14 cup 2% fat cottage cheese
- 3 ounces cooked ham, diced
- 1 fresh jalapeno, finely chopped
- 1 small tomatoes, coarsely chopped
- 14 teaspoon oregano
- 14 teaspoon black pepper
- 2 ounces low-fat cheese, shredded
- 3 tablespoons hot salsa
Directions

1Beat the eggs and cottage cheese together.

2Heat a skillet, medium heat and lightly spray with oil.

3Add the ham, Jalapeno, Tomato, oregano & pepper

4Stir fry until heated through.

5Pour in the egg mixture, cover & cook over medium heat (6 on an electric stove).

6After 3 minutes add the lite cheese, cover and continue cooking gor 2 more minutes.

7Flip 1/2 over the other half or scramble.

8Place on heated plate add the Salsa on top & enjoy.
