- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1 clove garlic, minced
- 2 Tbsp. oil
- 1 c. grated carrots
- 1 c. cooked rice
- 2 egg, beaten
- 1 c. chopped, cooked ham
Directions

1Saute onion, green pepper and garlic in oil in skillet for 5 minutes or until tender.

2Add carrots and rice.

3Cook for a minute, stirring constantly.

4Stir in eggs; cook until eggs are set, stirring frequently.
