Ingredients

  • 3 Tbsp. butter, melted
  • 1/2 c. brown sugar
  • 1 (8 oz.) can crushed pineapple
  • 1 lb. lean ground ham
  • 2 eggs, slightly beaten
  • 1 c. quick oats
  • 1/2 c. milk
  • 1/4 tsp. pepper
  • 1/4 tsp. ginger
  • 1 Tbsp. prepared mustard

Directions

    In a 9 x 5-inch pan, combine the butter and brown sugar. Drain the pineapple, reserving 1/4 cup of the juice.

    Spread pineapple over butter and brown sugar.

    Combine remaining ingredients, including pineapple juice.

    Mix well.

    Press into loaf pan.

    Bake in a 350° oven for 50 minutes.

    Invert to serve.
