- 1 c. cut-up ham
- 3 Tbsp. fat (bacon dripping, ham fat, or other)
- 1/4 c. flour
- 2 1/2 c. milk
- 1/4 tsp. mustard
- 1/2 tsp. salt
- celery to taste
- 4 hard-boiled eggs, cut into fourths
- hot biscuits
Directions

1Brown ham slightly in fat.

2Cook well if uncooked ham is used. Stir in flour; add milk.

3Cook and stir until thickened.

4Stir in mustard, salt and celery salt; add eggs.

5Heat just until hot; stir only to keep from sticking.

6Serve over hot split biscuits. Yields 8 servings.
