  • 14 ounces elbow macaroni
  • 1/2 pound ground beef
  • 2 tablespoons olive oil
  • 1 tomato diced
  • 1/2 onion diced
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 1/2 cup tomato sauce
  • 1/2 cup water
  • 2 teaspoons chili pepper optional
  • 8 ounces cheddar cheese Block of, I used a sharp cheddar
  • 1/2 cup tomato sauce
  • 1 teaspoon oregano
  • 1 tablespoon crushed garlic
  • shaved Parmesan optional

Directions

    In a pot make elbow macaroni per box instructions. Once the macaroni is made set aside. Cook the pasta to the al dente point.

    Use the same pot pour in 1 tbs of olive oil, the garlic, ground beef, diced tomato, onions, water, tomato sauce, chili pepper, sea salt & pepper, over high heat. It'll take about 15 minutes for the ground beef to cook thoroughly. Pour out any excess liquid into a larger pot.

    In that larger pot pour in the rest of the olive oil, oregano, 1/2 cup of tomato sauce, sea salt & pepper over medium heat.

    Preheat your oven to 350 degrees at this point

    Chop up the block of cheddar cheese into blocks (set aside about 1/3 or less for the end).

    Once the tomato sauce is heated throw in the cheddar cheese blocks into the pot, consistently stirring to avoid sticking.

    When the sauce is smooth & chunk less, mix in beef & the macaroni. Turn the stove off & mix.

    Transfer the mac & cheese to an oven safe tray, top with the remainder of the cheddar cheese & add grated Parmesan.

    Leave this in the oven until the top layer of cheese has melted & has a nice golden brown coat.
