  • 1 1/2 tsp Salt
  • 4 tbsp Sugar

    Combine the ingredients for the sushi vinegar and mix into the rice.

    When mixing, line a wooden sushi tub with a bit of sushi vinegar to stop the rice sticking to the sides.

    Quickly warm both sides of the toasted nori over a flame.

    Top with watever you like: omelet, cucumber, radish sprouts, pickled daikon radish, tuna, salmon, shiso leaves, canned tuna, prawn, squid etc.
