- 3 bunches spinach
- 6 pork chops (3/4-inch thick)
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- liquid smoke
- 6 medium sweet potatoes, peeled
- 4 Tbsp. butter
Directions

1Remove stems from spinach; wash and drain.

2Place half of spinach in a baking pan.

3Arrange pork chops on top; brush lightly with liquid smoke.

4Season with salt and pepper.

5Cover with remaining spinach.

6Slice potatoes 3/4-inch thick; arrange on top of spinach.

7Dot with butter.

8Cover and bake at 350° for 2 hours. Yields 6 servings.
