- 2/3 c. butter
- 1 1/2 c. sugar
- 3 eggs
- 1 Tbsp. vanilla
- 2 1/4 c. flour
- 1/2 c. cocoa
- 1 Tbsp. baking powder
- 1 Tbsp. soda
- 1/4 tsp. salt
- 1 c. water
- 2/3 c. beets, drained and dried
- 1 can cherry pie filling
- 1 can cream cheese frosting
Directions

1Cream sugar and butter. Beat eggs and vanilla together.

2Add to creamed mixture; add dry ingredients and water.

3Drain and fine chop beets; stir into batter. Pour into 2 (8-inch) lightly greased and floured pans. Bake 30 to 40 minutes at 350°. Cool. Fill with cherry pie filling between 2 layers and frost with cream cheese frosting. Chill and serve.
