- 2 1/2 c. cooked diced beets
- 1/2 c. sugar
- 1 Tbsp. cornstarch
- 1/2 c. vinegar
- 1/2 tsp. salt
- 2 Tbsp. butter or oleo
Directions

1Canned beets or fresh beets may be used.

2In a saucepan, mix sugar, cornstarch and salt.

3Stir in vinegar.

4Allow to boil 5 minutes, stirring constantly to make a thick, smooth sauce.

5Add cooked beets, diced or sliced, and allow the mixture to stand on warm heat for 1/2 hour to blend flavors.

6Just before serving, add butter.

7Reheat and serve warm.
