- 1 - 16 oz. can sliced beets
- 1/4 c. sugar
- 1 Tbsp. cornstarch
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/4 c. vinegar
Directions

1Drain beets; reserve liquid in 1 cup glass; pour beet liquid and add enough water to make 1 cup liquid.

2In one quart microwaveable casserole dish or bowl, combine sugar, cornstarch, salt, pepper, and vinegar.

3Stir in beet liquid; cook uncovered on high 2 1/2 to 3 minutes.

4Stir occasionally until mixture thickens and is clear.

5Add beets and stir lightly.

6Cook covered on high about 5 minutes.
