- 3 c. cooked beets
- 1/2 c. sugar
- 1 Tbsp. cornstarch
- 1/2 tsp. salt
- 1/2 c. mild vinegar or 6 Tbsp. vinegar and 4 Tbsp. cream
Directions

1Cook and stir all ingredients except beets.

2When thick and clear, add the beets.

3Place pan over hot water for about 30 minutes.

4Just before serving, heat again and add 2 tablespoons butter.
