- 6 medium beets
- 1/2 c. sugar
- 1/2 Tbsp. cornstarch
- 1/2 c. vinegar
- 2 Tbsp. butter
Directions

1Wash beets. Cook in boiling water until tender.

2Remove skins and cut the beets in thin slices or cubes.

3Mix sugar and cornstarch.

4Add vinegar in saucepan. Bring to a boil and boil for 5 minutes, stirring constantly.

5Just as sauce is taken from the stove, add butter.

6Pour over beets.

7Let them stand on back of stove to absorb the sweet-sour flavor of the sauce.
