  • 2 c. beets
  • 2/3 c. beet juice and water
  • 1 Tbsp. cornstarch
  • 4 tsp. sugar or substitute
  • 1/2 tsp. salt
  • 3 Tbsp. vinegar

Directions

    Heat beets with liquid.

    Mix cornstarch, sugar, salt, pepper and vinegar. Stir into beets. Cook, stirring constantly, until smooth, clear and thickened.
