- Crust
- 2 cups flour, all-purpose
- 2 teaspoons sugar granulated
- 1 teaspoon salt
- 3/4 cup vegetable shortening butter flavor
- 1/4 cup water cold
- 1 each eggs ightly beaten
- 1 1/2 teaspoons apple cider vinegar
- 1 x sugar and cinnamon
- Filling
- 13 cup brown sugar firmly packed
- 13 cup sugar granulated
- 1/2 teaspoon cinnamon
- 1 tablespoon vegetable shortening butter flavour
- 6 cups apples, granny smith baking apples, peeled and sliced
- 3 tablespoons apple cider fresh
- Glaze
- 1 x milk
- 1 x sugar granulated
Directions

1Heat oven to 375F (190C).

2For crust: Combine flour, granulated sugar and salt in a bowl.

3Cut in butter flavor shortening, using a pastry blender or 2 knives until all flour is blended in to form pea size chunks.

4Combine water, egg and vinegar.

5Pour into flour mixture.

6Mix lightly with a fork until dough forms a ball.

7Divide dough in half.

8Press between hands to form two 5 to 6 inch pancakes.

9Wrap in plastic or aluminum foil.

10Refrigerate.

11Flour rolling surface and pin lightly.

12Roll dough for bottom crust into a circle.

13Trim 1inch larger than upside down 9 inch pie plate.

14Loosen dough carefully.

15Fold into quarters.

16Unfold.

17Press into pie plate.

18Trim edge even with pie plate.

19For Filling: Combine brown sugar, granulated sugar, flour and cinnamon.

20Cut in butter flavor shortening with a fork until crumbs form.

21Toss apples with crumb mixture.

22Pour into unbaked pie shell.

23Sprinkle cider over filling.

24Roll top crust same as bottom.

25Use a cookie cutter to make a cut out in the center.

26Remove cut out.

27Sprinkle lightly with sugar and cinnamon.

28Bake separately.

29Place on top of pie halfway through the baking time.

30Moisten edge of bottom crust.

31Lift top crust onto the filled pie.

32Press edges together.

33Cut even with the edge of pie plate.

34Use tiny apple cutter to make vents in top crust for escape of steam.

35Use cutter to make additional tiny apple cut outs from extra pastry.

36Brush rim with water.
-
37Press apple cut outs gently in place all around edges.

38For Glaze: Brush top with milk.

39Sprinkle with the granulated sugar.

40Bake at 375F (190C) for 30 to 40 minutes.

41Cover edge of pie with foil the last 10 minutes, if necessary to prevent over browning.

42Cool until barely warm or to room temperature before serving.
