  • 1/2 c. apple juice
  • 1 c. shredded carrots
  • 1 c. chopped celery
  • 1/2 c. chopped onion
  • 1/4 tsp. nutmeg
  • 8 c. dry cornbread cubes
  • 2 c. finely chopped, peeled apple
  • 1/3 c. chopped walnuts
  • 1/4 c. toasted wheat germ
  • 1 c. chicken broth, defatted

    Preheat oven to 350°.

    Coat a large skillet with nonstick cooking spray.

    Add apple juice, carrots, celery and onion; cook until tender.

    Stir in nutmeg.

    Lightly coat a 3 to 4-quart casserole dish with nonstick cooking spray.

    Place cornbread cubes, apple, walnuts and wheat germ in casserole dish and toss lightly.

    Add onion mixture.

    Drizzle with enough broth to moisten and toss lightly again.

    Bake for 30 to 40 minutes.
