  • 4 c. apples, peeled and chopped
  • 2 c. sugar
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. salt
  • 1 c. oil
  • 3 c. cake or all-purpose flour
  • 1 tsp. vanilla
  • 1 c. chopped nuts
  • 2 eggs

Directions

    In a small bowl, combine apples with sugar.

    Let stand 1 hour. In another bowl, mix the flour, soda, cinnamon, nutmeg and salt. In a large bowl, combine eggs, oil and vanilla.

    Using a beater, mix until well blended.

    Add apples, a little at a time, alternating with flour mixture.

    Blend mixture well. Add walnuts. Pour mixture into a greased and floured Bundt pan and bake at 350° for 1 1/4 hours until done. Cool in pan for 25 minutes, then turn out onto a serving plate. Dust top with powdered sugar, if desired.
