Harvest Casserole

Ingredients

  • 1 lb. hamburg
  • 1 can whole peeled tomatoes
  • 2 c. thinly sliced and floured potatoes
  • 10 slices bread (left out overnight) or bread cubes
  • 1 small onion, chopped finely
  • 1 small pepper, cut into 6 strips
  • succotash (lima beans with corn, can use 1 frozen box of each)
  • 1 stick butter, melted

Directions

    Mix tomatoes with hamburg and onion.

    Spread on bottom of casserole dish.
  3. 3
    Add potatoes.

    Add succotash.
  5. 5
    Bake covered for 1 hour at 350°.

    Place bread cubes on top of casserole. Pour melted butter over top.

    Arrange pepper slices on top.
  8. 8
    Bake uncovered for 1/2 hour more.
