Ingredients

  • 4 to 5 lb. stewing chicken
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1 (4 oz.) can chopped mushrooms
  • 1 (12 oz.) pkg. noodles or macaroni
  • 3 Tbsp. chopped pimento
  • 1 c. pitted ripe olives (optional)
  • 1 (12 oz.) pkg. frozen green peas
  • 1 1/2 c. sharp cheese, grated
  • 2 Tbsp. butter
  • seasonings (celery salt, savory salt)
  • salt and pepper to taste

Directions

    Stew chicken, reserving stock (6 cups).

    Remove meat from bones in coarse pieces. Cook onion, pepper and mushrooms in butter until soft but not brown. Add liquid from mushrooms and olives to stock and bring to a boil. Add noodles and cook until tender. Add chicken, onion and pepper mixture, then add remaining ingredients except cheese.
