Hash Brown Casserole

Ingredients

  • 2 lb. frozen hash browns
  • 1/2 c. melted butter
  • 1/2 c. finely chopped onion
  • 1 pt. sour cream
  • 1 1/2 c. grated Cheddar cheese (reserve 1/4 c.)
  • 2 cans cream of potato soup or 1 can cream of chicken and 1 can cream of potato or cream of mushroom
  • 2 c. crushed cornflakes
  • 1/4 c. melted butter

Directions

    Mix all but last 2 ingredients and put in 9 x 13-inch pan. Top with crushed cornflakes mixed with 1/4 cup melted butter and reserved Cheddar cheese.

    Bake at 350° for about 45 minutes.

    Can be made ahead and refrigerated.

    Bake 10 to 15 minutes longer.
