Hash Brown Casserole

- 2 lb. frozen hash browns
- 1/2 c. melted butter
- 1/2 c. finely chopped onion
- 1 pt. sour cream
- 1 1/2 c. grated Cheddar cheese (reserve 1/4 c.)
- 2 cans cream of potato soup or 1 can cream of chicken and 1 can cream of potato or cream of mushroom
- 2 c. crushed cornflakes
- 1/4 c. melted butter
Directions

1Mix all but last 2 ingredients and put in 9 x 13-inch pan. Top with crushed cornflakes mixed with 1/4 cup melted butter and reserved Cheddar cheese.

2Bake at 350° for about 45 minutes.

3Can be made ahead and refrigerated.

4Bake 10 to 15 minutes longer.
