- 1 (2 lb.) frozen hash brown potatoes
- 1 (10 1/2 oz.) can cream of chicken soup, undiluted
- 1/2 c. sour cream
- 1 onion, chopped
- 2 Tbsp. oleo, melted
- 1 1/4 c. grated Cheddar cheese, divided
- salt and pepper
Directions

1Thaw potatoes.

2Mix potatoes with soup, sour cream, onion and melted oleo.

3Add 1 cup cheese, salt and pepper to taste.

4Reserve remaining 1/4 cup cheese as garnish.

5Pour mixture into a well-greased 9 x 13 x 2-inch baking dish.

6Bake at 350° for 45 minutes.

7Garnish with reserved cheese if desired.

8Can top with crushed corn flakes.
