- 2 c. shredded, cooked potatoes
- 1/4 c. chopped onions
- 1/4 c. green pepper
- 4 eggs (one per person)
- 1/4 c. milk
- 1/2 tsp. salt
- dash of pepper
- 1 c. shredded cheese
Directions

1Fry bacon until crisp.

2Remove from pan.

3Mix potatoes in pan and cook until underside is brown.

4Mix other ingredients together.

5Pour over potatoes.

6Top with cheese and bacon. Cook over low heat. This works well in an electric skillet.
