- 4 slices bacon
- 2 c. shredded cooked potatoes
- 1/4 c. chopped onion
- 1/4 c. chopped green pepper
- 4 eggs
- 1/4 c. milk
- 1/2 tsp. salt
- dash of pepper
- 1 c. shredded sharp process American cheese
Directions

1In large skillet, cook bacon until crisp.

2Leave drippings in skillet; drain bacon and crumble.

3Mix next 3 ingredients.

4Put into skillet.

5Cook over low heat until underside is crisp; add bacon.

6Blend eggs, milk, salt and pepper.

7Pour over potatoes. Top with cheese and bacon; cover.

8Cook over low heat about 10 minutes.

9Loosen omelet.
