- 2 russet potatoes, peeled
- Salt and freshly ground black pepper, to taste
- 1 tablespoon peanut or vegetable oil
- 1 tablespoon unsalted butter
Directions

1Using the medium holes on a grater, grate the potatoes into a bowl.

2Season with salt and pepper.

3Heat the oil and butter in a medium-size nonstick skillet over medium heat until hot.

4Add the potatoes and pat them down to form a pancake.

5Cover the skillet and cook until the bottom of the pancake is browned, 10 to 12 minutes.

6Turn it over carefully, cover, and cook 10 minutes longer or until nicely browned.

7Cut into four sections and serve immediately.
