  • 4 eggs, separated
  • 1 c. leftover mashed potatoes, packed
  • 1 c. milk or potato water
  • 1 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. sugar
  • 1/4 tsp. salt

Directions

    Beat egg yolks.

    Add potatoes and beat in with a spoon until smooth.

    Stir in milk.

    Sift dry ingredients and stir in.

    Beat egg whites until stiff and add into the rest.

    For thinner pancakes, add up to 1/2 cup more milk.

    Bake on lightly greased griddle.

    Makes about 16 pancakes.
