- 4 eggs, separated
- 1 c. leftover mashed potatoes, packed
- 1 c. milk or potato water
- 1 c. flour
- 1 tsp. baking powder
- 1/2 tsp. sugar
- 1/4 tsp. salt
Directions

1Beat egg yolks.

2Add potatoes and beat in with a spoon until smooth.

3Stir in milk.

4Sift dry ingredients and stir in.

5Beat egg whites until stiff and add into the rest.

6For thinner pancakes, add up to 1/2 cup more milk.

7Bake on lightly greased griddle.

8Makes about 16 pancakes.

9Very light and tender.
