  • 3 c. frozen loose pack shredded potatoes, thawed
  • 4 Tbsp. light margarine, melted
  • 1 c. diced, fully cooked lean ham
  • 1 c. shredded light Cheddar cheese
  • 1/4 c. diced green pepper
  • 2 eggs or 1/2 c. egg substitute
  • freshly ground pepper to taste
  • 1/2 c. skim milk

Directions

    Press hash browns between paper towel to remove excess moisture.

    Press into the bottom and up the sides of an ungreased 9-inch pie plate.

    Drizzle with melted margarine.

    Bake at 425° for 25 minutes.
