- 1 1/2 lb. potatoes (approximately 4 medium)
- 2 Tbsp. chopped onion
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 Tbsp. butter
- 2 Tbsp. vegetable oil or bacon fat
Directions

1Boil potatoes until cooked.

2Shred enough to measure 4 cups. Toss potatoes, onion, salt and pepper.

3Heat butter and oil in 10-inch skillet.

4Pack potato mixture firmly in skillet, leaving a 1/2-inch space around edge.

5Cook over low heat until bottom crust is brown, 10 to 15 minutes.

6Cut potato mixture into fourths; turn.

7Add 1 tablespoon oil if necessary.

8Cook until brown, 12 to 15 minutes longer.
