- 2 Tbsp. olive oil
- 3 c. shredded cooked potatoes or frozen hash browns
- 1/4 c. chopped onion
- 1/4 c. chopped green pepper
- 4 beaten eggs
- 1/4 c. milk
- 1 c. shredded Cheddar cheese
- pepper to taste
- 4 slices bacon, crumbled (optional)
Directions

1In 10-inch skillet, saute onion and green pepper; add potatoes. Add seasoning; cook over low heat about 20 minutes, or until underside is crisp and brown.

2Blend eggs, milk, 1/4 teaspoon salt and dash of pepper; stir in cheese.

3Pour over potatoes.

4Cover; cook over low heat 8 to 10 minutes.

5Loosen edges; serve in wedges. Serves 4.
