- 1 (10 oz.) pkg. New York State extra sharp Cheddar cheese
- saltine crackers
- ground red pepper
Directions

1Place crackers neatly in an 11 x 16-inch cookie sheet or jelly roll pan.

2Trim the last row and column to fit the pan.

3Crackers must fit together tightly.

4Sprinkle crackers lightly with red pepper.

5Coarsely grate the cheese directly over the crackers as evenly as possible.

6Turn on broiler.
-
7Place pan on bottom rack and leave door open.

8After a few minutes, the cheese will begin to bubble.

9When the cheese begins to dry out and most of the bubbles are firm on top, remove the pan from the oven.

10Allow the oven to cool.

11Return the pan to the oven set at 150°.

12Bake and close oven door.
