- 2 cloves garlic, minced
- 1 bell pepper, seeded and chopped
- 2 tomatoes, chopped (or 1 can chopped tomatoes)
- 1/4 teaspoon black pepper
- 2 cups canned black beans (not rinsed)

Directions

1Spray a heavy pan with cooking spray.

2Cook the onion, garlic, and pepper for about 3 minutes or until starting to get soft.

3Add the tomatoes and pepper.

4Cook and stir for 5 minutes.

5Add the beans, cover, and simmer for 20 minutes.
