  • 2 (16 ounce) canswhole beets, drained
  • 1 (20 ounce) can pineapple chunks, drained (reserve juice)
  • 1 tablespoon cornstarch
  • 1 tablespoon light molasses
  • 14 teaspoon salt

Directions

    Drain beets and pineapple separately; measure pineapple juice to make 1 cup (if needed add a little beet juice to make up any difference).

    Combine juice, cornstarch, molasses and salt in pan; stir until lumps are gone.

    Heat over medium heat until sauce thickens and is clear.

    Add beets and heat until hot.

    Just before serving, add pineapple; warm two or three minutes.
