  • 2 c. flour
  • 1 tsp. cinnamon
  • 2 tsp. vanilla
  • 3/4 c. oil
  • 2 c. grated carrots
  • 1 c. raisins
  • 10 oz. date nuggets
  • 2 tsp. soda
  • 1 tsp. salt
  • 3 eggs
  • 1 1/2 c. sugar
  • 1/2 c. coconut
  • 1/2 c. chopped nuts

Directions

    Mix dry ingredients and make a well in the center.

    Add all other ingredients in the well.

    Mix well in mixer.

    Place in pans and let set for 20 minutes before baking.
