Ingredients

  • 20 ounces, fluid Canned Pineapple, Reserve Juice
  • 1 whole Egg White
  • 13 cups Bread Crumbs
  • 3 whole White Fish Fillets
  • 1 cup Brown Rice
  • 16 packages Frozen Mixed Veggies

Directions

  1. 1
    Preheat oven to 400F.
  2. 2
Using the reserved pineapple juice mix 1/3 of the juice with 1 egg white in a small bowl.
  3. 3
Pour the bread crumbs in another small bowl.
  4. 4
Then, begin to dip the fish in the egg mixture and cover with the bread mixture.
  5. 5
Place these on a foil lined baking dish.
  6. 6
Once the fish is on the baking dish, pour another 1/3 of the juice over the fish.
  7. 7
Then, top with 1/2 a can of the pineapple.
  8. 8
This will bake in the oven for 20 minutes or until it is easily flaked with a fork.
  9. 9
While this is baking, prepare the rice as instructed on the package.
  10. 10
In a separate skillet, I mixed the veggies, remaining pineapple juice and chunks then cooked on medium heat.
  11. 11
I cooked these until the veggies were soft enough for our taste.
  12. 12
To serve this dish, I placed the fish on top of the rice and served with veggies.
