  • 3/4 c. flour
  • 1/4 tsp. baking soda
  • 3/4 c. sugar
  • 2 c. (10 oz.) pitted whole dates
  • 1 c. (5 oz.) macadamia nuts
  • 1 c. (8 oz.) glaze natural pineapple pieces
  • 3 eggs
  • 1/2 tsp. brandy flavoring
  • 1/4 tsp. baking powder
  • 3/4 tsp. salt

Directions

    Combine flour, baking powder, baking soda and salt.

    Stir in sugar.

    Add dates, nuts and pineapple pieces.

    Stir well to coat with flour mixture.

    Beat eggs until foamy and light yellow (about 3 minutes).

    Stir eggs and brandy flavoring into fruit-flour mixture.

    Mix well.

    Pour into greased and paper-lined 9 x 5 x 3-inch loaf pan.

    Bake in 300° oven for 1 1/2 hours.
