Hawaiian Fruit Compote

Ingredients

  • 2 c. fresh pineapple, cut into chunks or 1 can (20 oz.) pineapple chunks in pineapple juice, drained
  • 2 tangerines or oranges, sectioned and cut into small pieces
  • 1 banana, peeled and diced, coated with 1 tablespoon lemon juice
  • 2 c. strawberries, hulled and quartered
  • 1/2 c. thawed frozen orange juice concentrate
  • 1 c. sugar-free lemon soda

Directions

    Combine pineapple chunks, tangerines, banana, strawberries, orange juice concentrate and soda in a large bowl; toss gently. Cover and refrigerate until serving time.
