  • 1 cup fresh coconut milk ( or canned unsweetened coconut milk)
  • 1 cup pineapple juice
  • 1 teaspoon coconut extract
  • 1/2 cup chocolate syrup
  • 1 cup vanilla ice cream
  • Maraschino cherries and pineapple chunks skewered on toothpicks, for garnish

Directions

    Put all the ingredients, through the ice cream, in a blender and blend on medium speed until smooth, 15 seconds.

    Pour into tall frosted glasses.

    Add a cherry-and-pineapple garnish to each.
