Ingredients

  • 1 can (20 oz.) unsweetened pineapple chunks
  • 2 large green pepper, cut into 1 inch pieces
  • 1 large onion, quartered
  • 12 to 16 medium fresh mushrooms
  • 16 to 18 cherry tomatoes
  • 1/2 c. soy sauce
  • 1/4 c. olive oil
  • 1 tbsp. brown sugar
  • 2 tsp. ginger
  • cooked rice (3 to 4 c.)
  • 1 tsp. garlic powder
  • 1 tsp. dry mustard
  • 1/4 tsp. pepper
  • 1 lb. beef or chicken, cubed in 1 inch pieces

    Drain pineapple, reserve 1/2 cup juice.

    Place pineapple chunks and all vegetables in a large bowl; set aside.

    In saucepan, combine reserved pineapple juice, soy sauce, olive oil, brown sugar and spices.

    Bring to a boil, reduce heat, simmer uncovered for 5 minutes.

    Pour over pineapple and vegetables.

    Add meat, refrigerate at least 1 hour; stir occasionally.

    Alternate pineapple, meat and vegetables onto skewers.

    Grill about 20 minutes, turning and basting with juices of marinade a few times. Serve over cooked rice.
