- 4 eggs
- 2 1/2 c. flour
- 1 1/2 c. cooked rice
- 1 pkg. (10 oz.) coconut
- 1 1/2 c. sugar
- 2 tsp. baking soda
- 1 can crushed pineapple, undrained
Directions

1Beat eggs and sugar in a bowl for 2 minutes.

2Sift flour and soda together.

3Add to egg mixture.

4Beat 2 more minutes.

5Add remaining ingredients and mix well.

6Spoon into 2 greased and floured 5 x 9-inch loaf pans.

7Bake at 325° for 1 hour.

8Remove from pan and cool on rack.
