- 1 3/4 oz. can shoestring potatoes
- 4 eggs
- 4 oz. shredded Cheddar cheese (1 c.)
- 6 slices bacon, crisply cooked and crumbled
- 1 tsp. finely chopped fresh parsley
Directions

1Heat oven to 350°.

2Butter 8 or 9-inch glass pie plate or round baking dish.

3Spread shoestring potatoes evenly over bottom of pan. Makes 4 indentations into potatoes, down to bottom of dish, each about 1 1/2-inches across.

4Carefully break 1 egg into each indentation.

5Bake at 350° for 3 to 10 minutes; add cheese and parsley.

6Return to oven and bake until cheese melts and eggs are set.

7Cut into 4 wedges and serve immediately.
