- 1/2 c. plus 3 Tbsp. unsalted butter
- 1 1/4 c. sugar
- 3 eggs, separated
- 1 tsp. vanilla extract
- 1 c. hazelnuts, toasted, peeled and chopped fine
- 1 3/4 c. pastry flour
- 1 Tbsp. baking powder
- pinch of salt
- 1/4 c. coffee
Directions

1Have all the ingredients at room temperature, especially the butter and the eggs.

2In a mixing bowl, cream the butter and 1 cup of the sugar until very light and fluffy, 3 to 5 minutes in a mixer.

3Add the egg yolks, one at a time, beating thoroughly after each addition.

4Beat in the vanilla, then the hazelnuts.
