  • 2 cups medjol pitted dates (chopped)
  • 2 cups raw cashew nuts
  • 1/2 cup raw almonds
  • 3/4 cup cocoa powder
  • 1/2 cup unsweetened shredded coconut
  • 2 Tbsp. vanilla
  • 2-3 Tbsp. water

    Combine dates, cashews, almonds and cocoa powder in food processor. Pulse all ingredients together until texture is coarse. Then add coconut and do a quick pulse. Add vanilla and just enough water for the ingredients to stick together but still be dry. Press into a 11.5 x 4.5 loaf pan lined with foil. Chill for 1 hour. Cut and serve.
