Ingredients
- 1/2 medium onions minced
- 2 cloves garlic cloves chopped
- 1/4 pound ground turkey or lamb
- 1 tablespoon chicken broth, low salt
- 2 tablespoons chicken broth, low salt divided
- 3 cups kale rinsed and finely chopped, stems removed
- 2 large eggs
- 3 large egg whites
- 1 x salt and black pepper to taste
Directions

1Preheat broiler on low.

2Mince onion and chop garlic let them sit for 5 minutes to bring out its hidden health benefits.

3Heat 1 tablespoon broth in a 9 to 10 inch stainless steel skillet.

4Healthy Saute onion over medium heat, for about 3 minutes, stirring often.

5Add garlic, ground lamb or turkey, and cook for another 3 minutes on medium heat, breaking up clumps.

6Add kale and 2 tablespoons broth.

7Reduce heat to low and continue to cook covered for about 5 more minutes.

8Season with salt, pepper and mix.

9Beat eggs, season with a pinch of salt and pepper, and pour on top of mixture evenly.

10Cook on low for another 2 minutes without stirring.

11Put under broiler in middle of oven, about 7 inches from the heat source so it has time to cook without the top burning.

12When it gets firm it is done, about 2 to 3 minutes.
