- 2 Tbsp. vegetable oil
- 3 Tbsp. chopped onion
- 1/2 c. chopped celery
- 3 Tbsp. chopped green pepper
- 1/2 c. sliced fresh or canned mushrooms (optional)
- 1/2 lb. precooked turkey smoked sausage, cut into 1/2-inch cubes
- 1 1/2 c. diced, peeled potatoes (uncooked)
- 2 c. water
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. caraway seed (optional)
- 3 Tbsp. flour
- 1/2 c. milk
- 2 c. hot milk
- 2 c. canned corn
- oyster crackers or croutons
- Parmesan cheese
Directions

1In large, heavy saucepan, stock pot or Dutch oven, saute the onion, celery, green pepper and mushrooms in the vegetable oil until the onion is lightly browned.

2Add the turkey smoked sausage and continue cooking for 2 minutes.

3Add the diced potatoes, water, salt, pepper and caraway seed.

4Simmer for 45 minutes or until potatoes are tender.
