- 1 lb. lean boneless round steak, cut in cubes
- 2 c. cubed carrots
- 1 medium onion, cut in eighths
- 2 1/4 c. cubed red potatoes
- 1 (14 1/2 oz.) no-salt tomatoes
- 1 c. water
- 1 c. brewed coffee
- 2 Tbsp. molasses
- 1 Tbsp. Worcestershire sauce
- 1 beef bouillon cube
- 1/2 tsp. thyme
- 1/2 tsp. marjoram
- 1/4 tsp. hot sauce (optional)
- 1 bay leaf
- 1 (15 oz.) can pinto beans
Directions

1Trim fat from steak.

2Spray Dutch oven with cooking spray. Brown on all sides.

3Remove and place on paper towel to drain. Wipe grease from oven.

4Re-coat with spray.

5Add carrots and onion. Saute until slightly brown.

6Return steak to pan.

7Add all other ingredients.
-
8Stir and simmer on low for 1 1/2 hours.

9Add beans and simmer 30 minutes.

10Yield:
