- 4 c. cooked rice
- 1/4 c. pure cream
- 1/3 to 1 lb. peeled crawfish tails
- 8 eggs
- 1 large chopped onion
- 1 bunch green onions
- 1 (8 oz.) can tomato sauce
- 3 Tbsp. butter
- salt, pepper, parsley
Directions

1Saute crawfish, onions and bell pepper in butter until soft. Add tomato sauce and let simmer.

2Add beaten eggs and milk.

3Pour over mixture and cook until moisture has nearly evaporated and eggs are soft.

4Add rice mix.

5Serve hot.

6Shrimp or crabmeat can be used.
