Heavenly Eggs Crawfish

  • 4 c. cooked rice
  • 1/4 c. pure cream
  • 1/3 to 1 lb. peeled crawfish tails
  • 8 eggs
  • 1 large chopped onion
  • 1 bunch green onions
  • 1 (8 oz.) can tomato sauce
  • 3 Tbsp. butter
  • salt, pepper, parsley

Directions

    Saute crawfish, onions and bell pepper in butter until soft. Add tomato sauce and let simmer.

    Add beaten eggs and milk.

    Pour over mixture and cook until moisture has nearly evaporated and eggs are soft.

    Add rice mix.

    Serve hot.

    Shrimp or crabmeat can be used.
