  • 3 medium tomatoes, cut into wedges
  • 1/3 c. Italian-seasoned breadcrumbs
  • 2 tsp. margarine, melted
  • 1/4 c. ground coriander
  • 1/4 tsp. pepper
  • vegetable cooking spray
  • 1 Tbsp. chopped, fresh parsley or 1 tsp. dried parsley
  • 1/4 tsp. garlic powder
  • 1/4 tsp. ground cumin

Directions

    Coat a 10 x 6 x 2-inch baking dish with cooking spray.

    Arrange tomatoes in dish.

    Combine remaining ingredients in a small bowl, stirring well.

    Sprinkle over tomatoes.

    Bake, uncovered, for 5 minutes at 425° or until tomatoes are thoroughly heated and topping is lightly browned.
